Money-Saving Kitchen Tip: Turn That Old Chest Freezer Into a High-Efficiency Refrigerator

I know, it's pathetic that at age nearly-60, I know next to nothing about electricity. I do know that compact fluorescents use less than incandescent bulbs, though Cfls are no ecological picnic. So we've changed out most of the bulbs around Taylor Springs, Nm.

I also know about phantom electricity, the power that you're using even when things, like the Tv, are "off." So, because I'm writing about this, I just got up and went around shutting down power strips, and the Ups the Tv's plugged into, and the overhead fan, and the power cord for the indoor satellite radio. None of those appliances is in use while the day, when I'm home by myself, so why should they be pulling juice.

But the one appliance that's on all the time, that runs when it wants to, and is the biggest energy gobbler and least efficient of all is - the refrigerator. We have an old Crosley, which predates the energy Star ratings. We don't have a Kill-a-Watt meter (available for everywhere), so we don't know exactly how much electricity we're using, but I'm sure it's over 0 a year, maybe a lot over, and it's stupid.

I have long known that refrigerators, by design, don't work well. You're making cold by removing heat using compressors and motors and coils and fans, then you vent the heat into the kitchen, which in summer helps kick in your A/C. And every time you open the refrigerator or freezer door, you dump all the cold air out of the unit, forcing it to run again. Insane.

I've read about converting a top-opening chest freezer for use as a refrigerator. They make sense: they're best insulated than quarterly stand-up refrigerators, and because they open from the top, the cold stays inside instead of running out onto the floor. I've seen one conversion in use, in an off-the-grid house in Indiana, and it worked great, but as I said, I'm not much of an electrician, so I've never made a chest fridge of my own. Yeah, most chest freezers are smaller than approved household refrigerators, but we tend to keep a lot of stuff in the fridge that could, and should, be kept in the pantry instead. And we tend to just put stuff in the fridge every which way; a slight assosication and forethought wouldn't kill us, especially if it results in permanent savings.

So I had written on my to-do sheet, "chest refrigerator," and started poking around the internet to see if I could find a cheap meter for converting a small chest freezer to a refrigeration unit, and save a bunch of energy... And money.

And voila. Over at Mikey Sklar and Wendy Jehanara Tremayne's site, http://blog.HolyScrapHotSprings.com, "Digital homesteading & making all our stuff in Truth or Consequences, New Mexico," I found a plug-in controller unit made by Mikey, for converting freezers to refrigerators. Sklar says it'll sell out energy consumption from 0/yr. To less than /yr., so the unit will pay for itself in about six months.

And with 200 million refrigerators in the Us alone, the potential savings are mammoth, both in dollars and in costs to the environment. Let's see, that's 200 million times 0 a year; that's billion a year in electricity that we could cut to billion, just by installing a plug-in machine into a used chest freezer. That's got to be the equivalent of a power plant or two, easy. A no brainer; no household should be without one.

By insulating the sides and front, leaving space where the air intake at the lowest is located, and not outside up the back, where heat's vented, you can cut the energy use even further. Have you ever felt the side of your refrigerator, and noticed that it's all the time slightly cool? That's because that even though the walls and door are insulated, they're not insulated enough, and a simple Styrofoam-and-paneling enclosure is actually a worthwhile addition.

So, as an environmentalist and cheapskate, I've ultimately got this conversion on my Xmas wish list. There's a used appliance store up in Raton that I'm going to check out for a low-cost, working chest freezer. Free or cheap at a yard sale would be good, too.

What to Do With a Small Kitchen

I'm going to make the assumption that if you're dealing with a small kitchen, you're in an apartment-sized dwelling and you don't have to worry about engaging very often - or engaging large crowds.

It's a challenge, but here are a few ideas that will help. If you have a rectangular space with a minimum of 7 ft in the shorter dimension, the most efficient layout is that of a "galley kitchen".

If you're putting a new floor down, use a tile pattern (or real tiles if you wish) and lay them in a diagonal pattern. This makes the room seem larger.

Similarly, running the grain of the cabinets horizontally instead of vertically will also fool the eye into reasoning the space is larger. However, this assumes you're using convention cabinets, and you want a wood grain instead of a color. If you use a solid color, make it light - and nothing that creates glare. You're ready. A good sink is an absolute must in a kitchen. Good means large, deep and made of a durable material than can take a lot of beating. Stainless steel is my personal beloved with two or three compartments and one of them at least 8 inches deep. I personally like just one sink in my kitchen but I have installed two and even three sinks in clients' kitchens.

The most invention in the world of cooking, Induction, finally made it to the U.S. And it is Hot! It is a remarkable technology that lets you cook much faster while using much less electricity. Cool thing about it (literally) is that the exterior of the cook top stays cool to touch, a plus for safety.

I love built-in ovens. They are so much easier to work with as you can see what is happening in there without bending over. For clients who entertain a lot or for those with large families a double oven is a must. And if you want to no ifs ands or buts enjoy your guests while you entertain a warming drawer is a nice addition. And as far as fridges - adequate with bulky! all things is counter-deep these days so go with the flow.

Pot-filler

If you cook a lot of pasta or large quantities of anything, you need a pot filler. No more water spills on the floor and your back will thank you too.

Cookies, pies, tarts, cakes - many of my clients love to bake and I often get requests for custom-designed baking work stations. I start with a right countertop, one on which you could roll dough directly. Marble is my beloved material - there is something about that cool touch and smoothness no other material can mimic. My beloved are those compact ones that fit under the counter and hold up to 48 bottles with two or three temperature zones. And finally, does recycling drive you crazy? It doesn't have to, and creative use of space in your kitchen can yield a no-stress, no-frills ideas that works. Try a quadruple garbage/recycling center with deep pull-out drawers. In this configuration, four large bins are right where you need them so there is no need for setting up an additional one place in the house or garage; and no carrying those cans, bottles or newspapers around.
